Stuffed Chicken Breast
1 pound boneless, skinless chicken breasts 4 ounces pepper jack cheese, shredded
1 cup frozen spinach, thawed and drained
(you can also use fresh cooked spinach)
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 tablespoon breadcrumbs (I used Italian style)
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks
Preparation time 15mins
Cooking time 55mins

Snicker & Caramel Apple Salad
6 small apples, cored & chopped (Granny Smith and Red Delicious)
6 Snickers Bars, cut into bite sized pieces
1 box of Vanilla pudding mix (instant)
½ cup of milk
1 (12-ounce) container of Cool Whip
1 cup of marshmallows (optional)
½ cup of caramel sauce
Whisk together pudding mix & milk in a large bowl
Fold in Cool Whip
Fold in apples, chopped Snickers, and marshmallows
Drizzle caramel sauce on top
Refrigerate until ready to serve
